Since 1999, the biodynamic approach was brought in progressively in Paccot Domaine La Colombe and is now used throughout the vineyards. This translates by carrying soil maintenance out mechanically, without any chemical herbicides or insecticide in order to preserve the soil’s microbial life. Products used to protect the vineyard are limited to Bordeaux mixture, sulphur, biodynamic preparations and infusions made from plants like nettles, horsetail and yarrow. Harvest is done by hand. Nowadays, Laura is the 4th generation to take over the activities of the winery.
