Farming is organic certified and vinification is traditional. The grapes are destemmed and fermented with native yeasts, except the Cocottes which undergoes a Chauvet-style semi-carbonic fermentation. There is no remontage or pigeage, elevage is in old Burgundian oak, and the wines are neither fined nor filtered.
