Pierre-Olivier owns a few parcels of vines and he buys from like minded growers that farm sustainably or biodynamically.Pierre-Olivier believes that vineyard health is synonymous with a balanced ecosystem which explains the chickens used to graze their vineyards. They use horses when they can afford to. The conscientious production extends to the winery with indigenous yeast fermentations, minimal new oak and no fining or filtration in order to bottle, as close as possible, what each vineyard produced.
