Following fermentation, the wash is distilled twice through Glen Spey's lantern-shaped, copper-pot stills. The stills' unique shape and constricted neck causes reflux — a process which increases the efficiency of the stills and allows only the purest alcohol vapors to pass through. In addition, the distillery's spirit still is equipped with a purifier, which acts as a small condenser and causes a portion of the evaporating vapors to be pumped back into the pot and then re-distilled. This purification process — together with Glen Spey's unique after-coolers — results in a whisky with a signature fresh and elegant flavor profile. Glen Spey 21 Year Old Single Malt Scotch Whisky was distilled in 1988 and matured for a minimum of 21 years in American oak casks that were previously used to mature bourbon and sherry.
