      Domaine Louis Boillot is an estate in Chambolle-Musigny in the Côte de Nuits region of Burgundy. It has numerous Premier Cru vineyard holdings in both the Côte de Nuits and Côte de Beaune, the largest of which is situated in Gevrey-Chambertin. The vast majority of Louis Boillot wines are made from Pinot Noir, although the domaine makes a small amount of wine from Chardonnay and Gamay. Louis' father, Lucien Boillot originally hailed from Volnay, where his father ran Domaine Henri Boillot, but settled in Gevrey-Chambertin in the 1950s and founded Domaine Lucien Boillot et Fils. The estate was divided between his sons, Louis and Pierre in 2002. Louis released the first Domaine Louis Boillot vintage in 2003 from his cellars in Chambolle-Musigny, which he shares with partner Ghislaine Barthod – winemaker and owner of Domaine Ghislaine Barthod. The two domaines are managed completely independently of one another and the wines are also vinified separately. The vineyards are maintained and farmed using the "lutte raisonnée" (lit. "reasoned struggle") approach which involves minimal human intervention and the use of fewer manmade chemicals. Grapes are harvested, destemmed and given a four to six day cold pre-fermentation maceration. This is followed by fermentation in 20-30 percent new oak barrels and an élévage (aging) of 16-18 months in barrel prior to bottling without fining or filtration. Louis Boillot has holdings in a number of Premier Cru climats, including Champonnet in Gevrey-Chambertin, Les Prûliers in Nuits-Saint-Georges and Les Brouillards in Volnay. The domaine's only white premier cru wine is sourced from the Meursault Blagny Premier Cru climat in the Côte de Beaune. The domaine also produces several village- and regional-level red wines, as well as a Pinot Noir-based Bourgogne Mousseux wine and a selection of Moulin-à-Vent wines from the Beaujolais.
