Detailed Description

Bozal Borrego is a limited release. This mezcal is made with wild agave Castilla, which is a close relative to agave Espadin. Similar to a Pechuga, during the second distillation, a leg of lamb, in addition to seasonal wild fruits and grains harvested from the local market, are suspended inside the bottom of the still in a basket. These wild fruits include strawberries, apples and pineapple, while additional ingredients consist of pecans and ginger.

Bozal Borrego Sacrificio Mezcal Tasting Notes

Nose: Hints of smoky ash, sage and fruity-herbaceous notes.

Palate: Initially dry and slightly mineral (salty), then develops a fine sweetness of bright citrus fruits, blackberries and persimmons.

Finish: Soft finish with hints of smoked lamb.

Distillery Information

Bozal Mezcal Cuixe Single Maguey is made from wild cuixe agave, a subspecies of the Karwinskii Family of agave, harvested in the village of San Baltazar, Oaxaca. The distillery uses centuries old methods of distillation: cooking the hearts in earthen pit ovens, crushing them using a tehona wheel, using wild yeast for fermentation, and distilling in copper pot stills.
