A blend of mostly Pinot Noir with a touch of Chardonnay, this sparkling rosé sees 30% still red wine added. Vincent operates in the comparatively remote region of L'Aube, which isn't too far from Chablis.

"The story of "Couche winery" most prominently refers to Champagne Vincent Couche, a visionary biodynamic producer in France's Côte des Bar, known for his deep commitment to natural, low-intervention winemaking on his family's historic Pinot Noir and Chardonnay plots in Buxeuil and Montgueux, emphasizing soil vitality, native yeasts, and minimal sulfur to create expressive, terroir-driven Champagnes. While Château de Couches in Burgundy also exists, Vincent Couche is the leading figure associated with biodynamic "Couche" wines."
