      Dark ruby red color. On the nose initially pronounced spice, fine oak, then blood oranges and dark chocolate, plus rich wild berry fruit and leather. The palate is compact, with dense tannins and rich, dark ripe fruit, hearty, with a distinctly drying finish.

      Azienda Agricola San Salvatore is an Italian wine producer, located in the Cilento National Park, close to the village of Giungano in the southern Campania region. Its portfolio is dominated by Paestum IGT wines based on two key grape varieties: Aglianico for its reds and rosés and Fiano for its white wines. San Salvatore specializes in the production of varietal wines made from Aglianico, Fiano, Greco and Falanghina. These vines average eight to 18 years old and are divided between three vineyard sites in Stio, Paestum and Giungano. Typically the vines are planted on south/southwest-facing slopes at altitudes varying from 200 to 600 meters (656 to 1968 feet). The soils here are rich in clay and limestone and, in combination with the mild Mediterranean climate, provide ideal grape-growing conditions. Grapes are harvested by hand. In general the white wines are pressed, fermented and aged in stainless steel tanks – this is with the exception of Elea, which is made from 100 percent Greco. The majority of this wine ages on its lees in stainless steel for 14 months, while 10 percent ages in French oak barrels. San Salvatore's range of red wines is generally fermented in stainless steel tanks, before being aged in French oak barrels. Within this portfolio is the 100 percent Aglianico Riserva, Gillo Dorfles, which was created in honor of the Italian artist. It spends 24 months aging in French oak barrels and each vintage is identifiable by its unique label which is designed each year by Gillo Dorfles himself. The estate, founded by Giuseppe Pagano, covers 109 hectares (270 acre) comprising 24ha (58 acres) of vines, 10ha (24 acres) of olive groves and a herd of 450 buffalo (from which the estate produces its Mozzarella di Bufala Campana DOP). This vast estate is maintained and farmed using organic and biodynamic agricultural methods.
