The agave hearts are cooked in a conical oven of dry earth. An oak fire covered by river stones cooks the agave for three days while covered by thermal blankets. A horse-drawn tahona is used to grind the cooked agave. To preserve the organic properties of the mezcal, it is naturally fermented.
