      Detailed Description

      The ruby red colour of a young Brunello attenuates during its evolution leaving hints of light garnet which change as the wine ages. The structure is rich in dry extracts which reach up to 32-33gr/l. Tannins are present but soft with a long finish. The Brunello is excellent with roasted red meats and skewers of wild game while the older vintages improve over time even as meditation wines.

        • Wine Advocate: The 2012 Brunello di Montalcino La Cerbaiola is a beautiful expression with delicate berry flavors that wrap over the palate with polished perfection. The house style at Salvioni prizes ethereal elegance in a manner that few others can achieve within the Brunello appellation. These wines present a new facet each time you return to contemplate the fluid and ever-changing bouquet. Spicy tar clove and toasted nut appear as almost indistinguishable afterthoughts on the long-lasting finish.
        • Vinous: Good full red. Expressive aromas of dark cherry rose petal violet fresh herbs and flnty minerals. Juicy bright and gripping in a more floral rather than fruity style currently with substantial building tannins and high lively acidity giving this a slightly austere quality at present. Finishes bright and long with a youthful but noteworthy metallic edge and a strong note of violet; will it ever develop the fruit to rank along Salvioni’s many other great wines? One of the most backwards 2012 Brunellos I tasted this year I’d forget about this in the cellar for another decade or so.

        Producer Information

        The Salvioni family has been growing Sangiovese grapes for generations, starting in the early 1900s. Thanks to the last descendent, Mr. Giulio Salvioni, this winery also vinifies and bottles Brunello di Montalcino. The first production dates back to 1985.
        The vineyard, situated in the Commune of Montalcino at about 400 meters above sea level spans only 3 hectares. The soil is a mix of schist and clay marl. The plants are grown traditionally with the Cordone Speronato (Trellising) method and produce 42 quintals per hectares of grapes annually. Giulio Salvioni has managed to craft a true Brunello di Montalcino that is well integrated and balanced. Individualism and personal care have made this wine a bit of a cult player for the finest grained Brunello made.
