The palate explodes with detailed flavors and its tannins are already resolved and chocolaty, with seamless acidity and exotic spicy layers emerging on the extended finish. They eventually settled on an estate in the Adelaida District AVA in San Luis Obispo County, specifically a plot once singled out by oenologist André Tchelistcheff as being of great potential. It's rare to find high quality Cabernet Sauvginon in Paso Robles, rare even to find anyone vinifying the grape here, but the high altitude of the site combined with a forensic approach in the vineyard and winery have allowed the team at DAOU to produce some truly fantastic wines. The flagship Cabernet Sauvignons are dense, intense reds that are set to age for many decades.
