High West Distillery fue fundada en 2006 por David Perkins y su esposa, Jane. David, un ex bioquímico, se inspiró para abrir su propia destilería después de ver los paralelos entre el proceso de fermentación y destilación y su propio trabajo en bioquímica durante un viaje a una destilería de whisky en Kentucky.
