UU.) mantiene métodos de producción clásicos que se remontan a más de un siglo. Cosechan el agave a mano, lo asan en hornos de ladrillos durante 3 días y luego lo trituran con una tahona tirada por un tractor eléctrico (que reemplazó a su mula después de su muerte). Posteriormente, la pulpa se enjuaga con agua de manantial local y el mosto se fermenta durante 3,5 días en una tina de fermentación de madera. Se destila dos veces en alambiques clásicos.
