Aalto has 110 hectares (270 acres) of contracted vineyards in Ribera del Duero, as well as 20ha (50 acres) of younger vines in Valladolid. The contracted vineyards have vines that are between 40-100 years old, and are grown on a complex variety of soils. The P.S. (Pagos Seleccionados) wine is selected from the very best plots, or pagos, within the vineyards. The modern winery at Quintanilla de Arriba, some 40km (25 miles) east of Valladolid, was completed for the 2005 vintage. It has gravity-flow systems for moving wine, a low-temperature room to cool harvested grapes before destemming, custom-designed tanks in wood, concrete and stainless steel, and underground barrel halls.
