Drakon was conceived in 2021 after an oversupply of dragon fruit created by export disruptions encouraged founder Juan Sebastián Vélez to explore a way of transforming the fruit into a premium spirit. The distillery developed its own fermentation and distillation techniques to preserve pitahaya's delicate character, ultimately creating what it describes as the world's first spirit distilled exclusively from red dragon fruit.
