It produces a premium range of Chardonnay and Pinot Noir that are renown for their ability to cellar. The core range of the Bass Phillip wine portfolio is the Reserve, Premium and Estate Pinot Noir, sourced from the same plots within the estate vineyard. Planted in 1979, these vines have been biodynamically cultivated since 2002 on deep mineral soils. The terroir is renown for cool temperatures throughout the growing season allowing grapes to slowly ripen and accure flavor compounds. In the winery, fermentation occurs via wild yeasts from the vineyard and winery. New and used French Allier barriques are sourced for barrel-aging, the length of which depends on the wine with the Reserve Pinot Noir spending a maximum of 20 months. The movement of wine is powered by gravity to prevent excess oxidation and to maintain complexity, no fining or filtration is utilized prior to bottling.
