Deep ruby-purple in the glass, it has a spicy nose with aromas of cinnamon stick, baked marionberries, cedar, crème de cassis and pure baked blackberries with nuances of lilacs, pink peppercorn and charcuterie plus a classy framing of new oak. The palate is medium to full-bodied and slow to unfurl, eventually spreading its wings to explosive, savory-laced black fruits. They eventually settled on an estate in the Adelaida District AVA in San Luis Obispo County, specifically a plot once singled out by oenologist André Tchelistcheff as being of great potential. It's rare to find high quality Cabernet Sauvginon in Paso Robles, rare even to find anyone vinifying the grape here, but the high altitude of the site combined with a forensic approach in the vineyard and winery have allowed the team at DAOU to produce some truly fantastic wines. The flagship Cabernet Sauvignons are dense, intense reds that are set to age for many decades.
