      The 2021 Bianco Dettori is a cloudy, pale yellow-gold while lifting from the glass with a nuanced bouquet of peach skins, ground ginger and mint. This washes across the palate with a zesty blend of minerals and spiced orchard fruits while displaying a slight effervescence. It sizzles through the finish, forcing the mouth to water as sour melon notes fade.

      Tenute Dettori is an Italian wine producer located in Sardinia, producing wines from native varieties including Cannonau, Monica, Vermentino, Moscato, and an obscure Sardinian red variety called Pascale. Proprietor Alessandro Dettori is known for producing natural wines from single varieties – he does not practice blending and will only produce varieties that are native or considered historically important to the island of Sardinia. Moreover, he does not agree with the DOC system and produces all wines under the Romangia IGT designation. The property is certified biodynamic and organic and covers the area of Badde Nigolosu, a natural amphitheater that sits on the highest hills above the town of Sennori. The soils are calcareous and planted to low-yielding vines. Dettori's portfolio of varietal wines covers a range of grape varieties and vineyards. Dettori Bianco is produced from Vermentino; Tuderi, Tenores, and Dettori are made from different Cannonau vineyards; and there are a range of other wines made from Sardinia's more obscure varieties. Each wine is vinified using natural winemaking methods. Tenute Dettori does not inoculate with cultured yeasts or enzymes and does not fine, clarify, or use oak on any wines. The grapes are destemmed but not crushed and macerate on their skins in cement vats without the addition of sulfur. The wines are typically not bottled until two to three years after harvest.
