Most of the 9 hectares of vineyards are also located in Pierry, which are spread over 45 plots in the 7 municipalities of Pierry, Moussy, Epernay, Dizy, Mardeuil, Boursault and Vertus. The plants are on average 40 years old and planted with 50% Chardonnay, 40% Pinot Meunier and 10% Pinot Noir. In 2005, a modern and functional cellar was built, which houses steel tanks, oak barrels of various sizes, a concrete egg and a clay amphora for the aging of the base wines. Like many of the young vignerons, Jean-Marc works according to biodynamic ideas. A lot of manual work by the five employees in the vineyard, the use of a horse instead of a tractor and natural substances to fertilize and strengthen the vines ensure the biodiversity of the soil and promote healthy and resistant vines. The statement \"the wine is made in the vineyard\" sounds a bit trite, but it's true. Therefore, it is always the aim of the winemaker to produce grapes that reflect the terroir as best as possible and result in authentic wines full of character.
