A vineyard by vineyard process (more than 40 MICRO-VINIFICATIONS every harvest), with tanks adapted to the soil of each parcel (open barrels, amphoras, oak vats....).We prefer the word infusion to extract.We have revived traditions, such as FOOT-PRESSING.
