To begin the process, a bold, juniper rich gin is infused with sloes and a subtle mix of citrus and spice, then allowed to slowly steep for no less than three months. A month before bottling, the Wrecking Coast team begin to gradually add sweetness to enhance the rich depth of the berries – which is clever and logical, its always good to taste as you go when preparing food and drink, to get a perfect balance! Finally, wildflower honey from local Cornish hives is added, wrapping this all up beautifully.
