The major Cava varieties Xarel-lo, Macabeo and Parellada are dominant but the Champagne varieties Chardonnay and Pinot Noir have been used in small quantities in blends. Gramona have constructed a new state-of-the-art gravity winery, a purpose built facility that allows for the movement of juice and wine through gravity to aid the preservation of phenolics. All initial innoculations are spontaneous with wild yeasts employed for the fermentation process. Gramona has buillt a reputation for uncommonly long bottle-aging of wines prior to release. Gramona has a long vinification history with the first winery established in 1881 named Celler Battle.
