All grapes are hand harvested. Indigenous yeast is used.Pinot Noir for the reds is destemmed and fermented utilising indigenous yeasts in temperature controlled stainless steel vats. Wines may be aged for 12-15 months in French oak with no more than 30% new wood.Chardonnay is also destemmed and delicately pressed. Juice is fermented with the aid of indigenous yeast and older French barrels are used for this purpose with the exception of their Corton Charlemagne which is both aged and fermented in new French oak.
