The oak barrel adds the amber color to the spirit as well as sweet notes like vanilla, caramel, and brown sugar. Add those notes to the clove, peppercorn, cinnamon, and allspice of the Autumn Gin recipe and the resulting Winter Gin is a true hybrid spirit that can hold up in both gin and whiskey cocktails.
