Marion Legendre, a New Orleans pharmacist, learned the techniques of absinthe and pastis while serving in France during World War I. After Prohibition ended, he returned to New Orleans and introduced his own absinthe-inspired spirit, originally called Legendre Absinthe. Because of American regulations surrounding the word absinthe, the product was renamed Legendre Herbsaint and launched in the 1930s. The Sazerac Company later acquired the Legendre business and continues to produce Herbsaint using Legendre's original recipe.
