Rootstocks were sourced from the Rhône Valley and clones were carefully matched to his property. In the winery, interventions are kept to a minimum. After de-stemming, some grapes are left in whole bunches while the rest is gently pressed by foot. Ferments take place in small concrete vats using wild yeasts and foregoing temperature control and sulfur additions. The wine is aged in a mix of French oak, cement tanks and ceramic casks for around 14 months (some vintages have seen no oak) and bottled unfiltered to maintain the complexity of the wine. In exceptional years Stefano ages some Syrah for an additional 30 months in bottle before releasing it as the Apice cuvée.
