Producer Information
Hattingley Valley is an award-winning producer of traditional method sparkling and still wines located in the English county of Hampshire, using fruit from several counties. The estate was founded in 2008 by Simon Robinson. He had acquired Hattingley Farm in Lower Wield, near Alresford, in 2000. The first wines were released in 2013; the excellent 2018 vintage cemented the winery's reputation. The state of the art eco-friendly winery was built from 2009 to 2010. Total capacity is around 650 tonnes and 300,000 bottles per annum, with storage space at around 460,000 liters, split between around 100 tanks and 230 barrels. Harvests are undertaken by hand; grapes are then rushed to the winery in small 20kg crates with as little premature crushing as possible. They are then gently pressed in one of several sizes of Coquard press, as often used in Champagne. Part of the base wine is fermented in old Burgundian oak barrels with the remainder vinified in stainless steel tanks; specially selected Champagne yeasts are used. A component then undergoes malolactic fermentation. After second fermentation in bottle the wines age for between 18 months and seven years.
