      Producer Information

      Jacques Bavard became a winemaker after a 25-year career in the restaurant business in Paris, from 1992 to 2006. He is originally from Puligny-Montrachet, south of Beaune, in the Burgundy. In 2003, he bought the family home with the idea of converting to a new profession. He followed in the footsteps of his grandfather, a winegrower in the village until the 1970s. After training at the CFPPA in Beaune in his youth, he produced his first vintage in 2005.
      Geographic location
      The wines of Jacques Bavard come from parcels located on the Côte of Beaune. They extend over the communes of Puligny-Montrachet, Auxey-Duresses, Pommard, Saint-Romain, Santenay and Saint-Aubin. Jacques Bavard produces white Chardonnay wine, as well as red Pinot Noir wine. The cultivation of the vines is carried out in the respect of the soils, according to the principles of ecology.
      The wines of Jacques Bavard
      The whites are matured in 350 liter barrels, and the reds follow a 10 to 12 day cold maceration, and are placed in 228 liter barrels. The wines are matured for a minimum of 12 months in barrels, finishing their maturation for 3 to 6 months in stainless steel tanks. In the end, crisp, fresh whites with a beautiful minerality! Red wines with fine and delicate tannins, with a great freshness!
