      Through an extended pre-fermentation maceration process aimed at extracting maximum aromatics from the robust-skinned Albariño grapes, and five months of lees ageing post-fermentation, the outcome is a refined and textured wine, boasting aromas of apricot and ripe lemon.

                                                                                                      If anything defines the Ruiz family, it is their passion for wine. A legacy inherited from a family dynasty that goes back to Rosa's great-grandfather, Ángel, who made wine at the end of the 19th Century. A tradition that her father professionalised, when in the 1980s, after retiring, he founded a small winery next to the family home in San Miguel de Tabagón, O Rosal. Rosa's childhood, almost without realising, took place among the vines. During summer months she would travel from Vigo, where she was born, to the family home in O Rosal. An estate that her father inherited from her grandfather, where Rosa and her sisters looked after and harvested the grapes to make wine to drink at home, almost as if it were a game. Years later, in the 1980s, her father, Santiago Ruiz, decided to modernise the winery, replacing the traditional wooden barrels with stainless steel tanks. A pioneering process that was revolutionary at the time and marked a before and an after in the history of Galician wines. With this background, it was almost impossible for Rosa not to dedicate herself to wine. A passion that started little by little. Firstly, the weekends spent helping her father with paperwork in the winery, gradually becoming his assistant, and learning the techniques and secrets of winemaking in O Rosal from him. It was an apprenticeship that left her with a profound love and respect for the vine. Today, Rosa Ruiz is the historic winery's brand ambassador. Visiting the winery museum, located in San Miguel de Tabagón with her is a great reminder of the important role that her father played in developing the Rías Baixas Designation of Origin. She is an expert host, chatting to you amenably as you make your way round this calm and peaceful winery, where you can discover how wine used to be made traditionally in the area, and learn more about the legacy left by Santiago Ruiz. On the visit, Rosa is proud to tell you many interesting stories about her father's life, as well as showing the many dedications written to him throughout the years in the visitor’s guest book.
