Catskill Provisions New York Honey Whiskey

New York Honey Whiskey is made from a mash of 80% rye and 20% malted barley, which the McKenzies source from within a 50-mile radius of their distillery. After purchasing the raw, whole grains from local farmers (they store them in holding tanks that they've nicknamed Rye-ella and Malt-ilda), the grains are milled and mashed without using any commercial enzymes. Then, the wash is distilled through a two-ton copper pot still that traveled 4,000 miles from Markdorf, Germany to upstate New York. Following distillation, the rye is aged in freshly charred American oak casks. Once it has reached its peak flavor profile, the rye is infused with Catskill Provisions late-summer honey. Located in a small corner of the Catskill Mountains, Catskill Provisions specializes in creating raw, all-natural handmade food products using local ingredients.

Nose: Warm, spicy aroma.

Palate: Notes of sweet citrus, mellow honey and wildflowers on the palate.

Finish: Finish is warm and bold, with a touch of ginger and oak.

Finger Lakes Distilling is a craft distillery on the East shore of Seneca Lake in Upstate New York Like many great things, Finger Lakes Distilling is a NYS Farm Distillery, which means that they’re a small operation making a handcrafted product. It also means they’re able to devote all their attention to everything they make; they don’t take any shortcuts. Their flavored vodkas and liqueurs are made in the traditional manner, by soaking real fruits in the spirit. They don’t add extracts or synthetic flavoring to speed up the process. Their whiskies rest in oak barrels for as long as they need to, until they mature into the rich aged spirit they offer with pride.
