Château Caronne Ste Gemme is a Bordeaux estate just south of Saint-Julien in the Haut-Médoc. Its grand vin is a classic Bordeaux blend, and was classified as a Cru Bourgeois Supérieur of Haut-Médoc in 1932 and Cru Bourgeois Exceptionnel in 1966. The château takes its name from the Gaelic word carona, meaning "little spring". The estate has an extensive history dating back to the mid 17th Century, but the first recorded mention of winemaking at Château Caronne Ste Gemme did not appear until the late 18th Century. Emile and Eugène Borie acquired the estate in 1900 and later passed the property down to their descendants. Today, Caronne Ste Gemme is owned by Jean and Francois Nony. The vineyard covers a single 40 hectare (98 acre) plot. It is planted on a layer of gravel overlying a combination of iron-rich sandstone, sand and clay soils. Plantings are divided into 60 percent Cabernet Sauvignon, 34 percent Merlot and 6 percent Petit Verdot, with the average age of these vines totalling 30 years old. These proportions are mirrored in the makeup of the grand vin. The majority of the grapes are harvested by hand, destemmed and then lightly crushed. The fruit is fermented in either stainless steel or cement vats. There are two pressings following maceration, with the result of the first pressing used for the grand vin. The wines are then aged for 12 months in French oak, approximately 25 percent of which is new, and bottled with fining around 20 months after harvest.
