Producer Information
Only 4 ha of vines with microscopic yields give birth here to haute couture bottles, imbued with the most moving depth and texture. Franck Avéla fulfilled his dream by taking the path of the vineyards. He already had a winegrower's fiber since his former job as a vat restorer allowed him to acquire a solid knowledge of the different vineyards. But it was only really in 2002, that he embarks on the adventure with the aim of producing wines that reveal the terroir and the beauty of the ancient grape varieties of Languedoc such as Carignan and Cinsault. He then carefully selected his plots and fell in ecstasy in front of the terroirs located on the heights of Creissan, at the gates of the Haut Languedoc Natural Park. On this clay-limestone plateau, very old vines have taken root since 1911. Inhabited by a concern for excellence, Franck Avéla decided to concentrate on a small production area (only 4 ha) allowing him to carry out craftsmanship in the vineyard, a determining factor in his eyes in shaping great wines. In the process of being converted to organic farming, it is with high standards, rigor and precision that all the work in the vineyard is carried out. No synthetic product, nor herbicides are used. Controlled grassing brings about the development of microbial life in the soil. Pruning is late and severe. The grapes are fully destemmed and crushed in the old fashioned way. Plot vinifications are carried out in order to express the essence of each terroir. The fermentations are natural. Soft pigeages and manual pressing in a vertical press are carried out with care and application. The wines are then aged on the lees for 24 months in French oak barrels. They are then bottled without filtration and with very little sulphite.
