Here the pure and ripe nose offers yet another level of spiciness that includes clove, anise and sandalwood that adds breadth of the aromas of black raspberry, violet, rose petal and tea. The super-sleek, intense and mineral-driven flavors possess excellent delineation while delivering outstanding length on the classy, focused and balanced finale.

• Wine Advocate: One of my favorite wines in the cellar is the 2019 Volnay 1er Cru Les Caillerets, a lovely cuvée that wafts from the glass with notes of plums, rose petals, sweet berry fruit, raw cocoa and loamy soil. Medium to full-bodied, bright and lively, it’s sapid and concentrated, with refined tannins and a long, saline finish.

• Decanter: From 0.6ha of 50-year-old vines in Caillerets, fermented in small casks (all new). The wood does not dominate the wine, which delivers fresh red berry fruit, some limestone-driven minerality and a lively texture on the palate. With a wonderful balance between the acidity and extract, in my view this is among the best of the reds from the Côte de Beaune.

Domaine Henri Boillot is a wine producer based in Meursault known for its red and white wines from Côtes de Beaune appellations. The estate was named Domaine Jean Boillot until 2005, but was changed when Henri Boillot bought out his siblings in order to distinguish it from his brother's new Domaine Jean-Marc Boillot. Henri had previously set up Maison Henri Boillot for négociant wines and retains these labels to distinguish them from estate wines. A majority of Boillot's white wines are sourced from premier crus in Meursault and Puligny-Montrachet, including the entire 4 hectare (10 ac) Clos de la Mouchere vineyard. The domaine's Pinot Noir-based wines come from premier crus in Savigny, Beaune and Volnay. In the vineyard, Boillot avoids the use of insecticides and herbicides. Heavy pruning takes place in spring to limit yields and fruit is harvested as late as possible to ensure maximum phenolic maturity. The Henri Boillot winery is situated in Meursault. The white wines are fermented in 350-liter barrels and bottled after 18 months of barrel ageing. The Pinot Noir is fermented in stainless steel tanks with some stems retained, and then sees 18 months of barrel aging. The premier and grand cru wines under the Maison Henri Boillot label are sourced from single-vineyard plots with single owners to preserve the authenticity of the site.
