Producer Information
In 2006, Marc Grin, Pablo Ossorio and Rafael Navarro created Bodegas Hispano Suizas to fulfill a long- held dream of producing quality wines of their own. Oenologists and winegrowers by trade with a long experience in the wine industry, they decided to set up shop in DO Utiel-Requena, in the province of Valencia. Located at 750 metres above sea level, the area benefits from the cooling effect of altitude and also from the influence of the Mediterranean, which is at a straight-line distance of approximately 50 km. Nowadays, Bodegas Hispano Suizas – the name is a reference to the family origins of the three founding partners – has 61 hectares of vineyards, most of which are composed of clay-limestone soils. The winery grows mainly international grape varieties: Cabernet Sauvignon, Cabernet Franc, Merlot, Syrah, Pinot Noir, Sauvignon Blanc and Chardonnay. As for the local grapes, the most planted one is Bobal. The vineyards are cultivated following environmentally friendly and highly precise farming techniques with the aim of maximizing grape quality. The harvest season goes on for almost 3 months, starting at the beginning of August with the white varieties used for Cava, and ending in October with the red varieties. Once in the winemaking facility of Bodegas Hispano Suizas, the grapes first undergo a cold soak for 3 days at -10oC to concentrate aromatic and phenolic compounds. Alcoholic fermentation takes place in 400-litre American oak barrels equipped with cooling plates to control temperature. Finally, the wines are aged in those same barrels, or in 300-litre French oak barrels from Allier.
