Detailed Description

Mezcal Joven, from San Pablo Huixtepec, Oaxaca. Crystalline color, Thanks to its double distillation in Copper Alembic fed over low heat with Encino wood and its double filtration allows us to increase its purity. 100% Agave Espadin, Thanks to the care in the entire process that from the seed of the Agave to its maturation allows us to make a selection of agave to make the cut obtaining the pineapples, which are put into a previously heated stone oven for their cooking for 72 hrs. The cooked agave is grinding, once it is ground it is introduced into Sabino wooden vats with well water for fermentation (Sabino, harmless wood, it does not remove or add flavors) for 14 to 18 days in a natural way. 55º alcoholic graduation (maximum alcoholic content allowed by CRM) gives us an exquisite flavor and an excellent body.

IBA Joven Mezcal Tasting Notes

Nose: Nose is complex yet not overwhelming.
