The mission statement at Kimo Sabe is a modern style of mezcal that trades in the rustic history for a millennial-friendly tipple that utilizes modern techniques such as a third distillation and ultrasound technology. This is all in an aim to unseat tequila as agave king. Their añejo ages for 18 months (despite the one year declared on the bottle) in used American oak which previously held their reposado mezcal.

Nose: Nose of sweet grass.

Palate: Delicate taste of burnt sugar, Spicy vanilla, Rum raisin.

Finish: Butter crème finish.

Kimo Sabe Joven: Albedo is a mezcal handcrafted in Mexico. Kimo Sabe founders Jim and Ashley Walsh began their career in the world of chocolate. After finding success in the chocolate industry, they decided to apply their considerable talents to agave.

Using techniques they’d developed with cacao, the Walshes planted 1,200 hectares of agave in Mexico, which are allowed to ripen for 8 years before they are harvested and distilled as Joven: Albedo.
