Detailed Description

This brand was created as a collaboration between Flor Prendergast and New Hampshire-based Tamworth Distilling founder, Steven Grasse. The whiskey was distilled and aged in West Cork and is a blend of 10 year-old malt and 4 year-old grain whiskey. It finished its maturation in American rye casks sourced from Tamworth for six months. This Irish-American collaboration features John Morrissey (then aged 22) and Yankee Sullivan (then aged 40) on the label. Their infamous fight in Boston Corners, New York (then Massachusetts) on October 12, 1853 went 37 rounds with Morrissey being declared the winner despite Sullivan knocking him out.

Nose: Light and delicate with aromas of vanilla, stem ginger, green apples, mint, sawdust and lemon peel.

Palate: Fresh and lightly fruity. Flavours of lemon cream, vanilla, ginger, oak, apples and some prickly spice.

Finish: The finish is quite short, starting with a bitter-tinged and tannic quality, moving into a rich and honeyed note, with spicy oak and char.

Distillery Information

Founded in 2003 by three close friends Denis McCarthy, Ger McCarthy & John O’Connell in Union Hall, West Cork, Ireland; West Cork Distillers was inspired by the proud history of artisan food & beverage production in Cork. The trio had some experience of this in their previous occupations, as Ger & Denis were deep sea trawlermen and John was a research & development scientist for some large blue chip food & beverage companies.
