      Dark and focused aromas of cherry, clove and caramel meet with creamy milk chocolate and mahogany on the layered nose of this bottling. Showing a deft mastery of tannins, which is the Daou hallmark, the palate is silky and yet structured, offering rich fruit and lightly bitter walnut flavors.

      • Wine Advocate: The 2021 Cabernet Sauvignon Reserve is a blend of 75% Cabernet Sauvignon, 23% Petit Verdot, 1% Merlot and 1% Cabernet Franc matured in 50% new French oak for 16 months. It has inviting aromas of chocolate, cigars, dried herbs and classy oak spices over a core of dark fruit. The medium-bodied palate is silky and fresh with a long, flavorful finish, although it feels youthfully wound and will benefit from a few more years in bottle.
      • James Suckling: Beautiful cabernet character here with blackcurrants and blackberries at the perfect level of ripeness, together with hints of walnuts, cedar and black olives. Graphite, too. Medium- to full-bodied, so silky and polished. Tightly packed tannins but refined and delicate at the same time. Lingering finish. Even and long.

His name is Daniel Daou and he is devoting his life and every imaginable resource to creating, first and foremost, a Cabernet Sauvignon that rivals the very best in the world. Gracefully perched atop a stunning promontory at 2,200 feet, the DAOU Spanish Colonial style winery is embraced by a tangible serenity. Hawks wheel and bank while the all-day sun caresses close planted rows of lush, emerald green vines. The 100 percent calcareous soil makes no sound as it passes out nourishment and only a gentle breeze flows up through the Templeton Gap from the Pacific. The quiet is bewitching; you want to lay down roots here, just as the four-year-old vines have done. But the sense of peace belies the serious industry at work on this 100 acre estate. No effort is spared to create the luscious varietals and blends that flow from this limited production winery. This kind of synergy happens rarely: superlative climate and terroir, super intensive vineyard culture, and cutting edge viticultural practice.
