Ferroni Brut de Fût Grand Arôme 2017 is a long fermentation molasses rum, distilled in a column and then aged for 7 years in a barrel of Cognac. The aging is 100% Mediterranean: very hot and dry summers, with cold winters. The thermal amplitudes are important. This aging accelerates the maturation of rums as much as in a tropical climate, with an often higher share for the angels.
