The winery was established in 1890 by the brothers Herbert and Frederick Kay. The first vines brought to the property were Shiraz, Riesling and Cabernet Sauvignon with Shiraz being the first to be planted. The two brothers also had roles in the Australian wine industry outside of their own vineyards: Herbert was chairman on the Australian Wine Board from 1933 until 1945, and Frederick was a member of the Phylloxera Board. Kay Brothers sold a significant portion of its fruit to bulk-wine producers for much of its history until a local Australian wine market began to develop in the 1960s and 1970s. The number of varieties in its portfolio has expanded to include Grenache, Merlot, Muscat Blanc, and Mourvedre although Shiraz still makes the brand's signature wines.
