Sangiovese is the predominant variety in the vineyards, and is used to make the signature Vino Nobile di Montepulciano and Vino Nobile di Montepulciano Riserva DOCG wines. Cantine Dei also makes a small amount of white wine from estate-grown Malvasia and Trebbiano, as well as producing a Vin Santo di Montepulciano. The estate was founded in 1964, when the Bossona vineyard in Montepulciano was planted by Alibrando Dei. Cantine Dei has since expanded its vineyard holdings, but Bossona remains the source for the flagship Riserva Vin Nobile di Montepulciano and the labels carry the vineyard's name. Dei bought a second vineyard, Martiena, in the 1970s, but until the 1980s the grapes from both vineyards were sold to other producers. The family's first wine under their own name was a 1985 Vino Nobile produced in a leased winery. The success of this wine led to the construction of an estate winery in 1989, and the planting of two more vineyards. Cantine Dei's estate now covers 120 hectares (295 acres) with 55 hectares (136 acres) under vine divided between four vineyards: Bossona, Martiena, La Ciarliana and La Piaggia.
