A 2013 release, Sipsmith V.J.O.P (Very Junipery Over Proof) Gin turns the juniper up to 11 as well as being bottled at higher strength of 57.7%. The process includes a 'triple juniper' technique which adds the juniper at three stages - first it is macerated for three days, then more juniper is added to the pot still and finally vapour infused into the spirit. This will work well in fuller flavoured gin-based cocktails.

Detailed Description

All hail the juniper berry! If, like us, you think the juniper berry is a proper champion of the botanical world, then you'll love Sipsmith's V.J.O.P., which is jam packed with the fresh, peppery berries. V.J.O.P. (which of course stands for "Very Junipery Over Proof") is made in a similar way to Sipsmith's regular gin, except that the juniper has been turned up to eleven. With extra juniper added to the original recipe, even more is added while the gin is in Sipsmith's lovely pot still, and it's also vapour infused via their Carter Head. As if this wasn't enough to make the V.J.O.P. stand out in a crowd, it's also been bottled at 57.7% to give it a hefty, "junipery" kick.

Nose: Massive helpings of pine and peppercorn on the nose, with just a hint of orange underneath.

Palate: Oily juniper once again dominates, supported by clove, waxy peels and coriander.

Finish: Lasting peppery heat and earthy juniper richness.

It all began in 2009, in a tiny workshop in Hammersmith, London. Three great friends – Sam, Fairfax, and Jared – set up London’s first traditional copper pot distillery in nearly 200 years.
