      The dark ruby-colored 1999 Volnay La Carrelle Sous La Chapelle has a feminine, violet, rose, and blackberry-scented nose.

        Reviews:

        • Allen Meadows: Jean-Marc reports that his yields in 99 for most wines were between 45 and 50 hl/ha with acceptable acidity levels. He prefers his 99s to his 98s though he believes the 98s may very well live longer. The 99s saw 25 to 30% new oak and were lightly filtered but not fined.
        • Wine Advocate: The dark ruby-colored 1999 Volnay La Carrelle Sous La Chapelle has a feminine, violet, rose, and blackberry-scented nose. On the palate, however, it explodes with blackberries, freshly laid road tar, and licorice. This backward, highly expressive wine will require cellaring due to its copious yet ripe tannin.

        Domaine J.M. Boillot (also known as Domaine Jean-Marc Boillot) is a Burgundy wine estate producing pure, aromatic wines from Pinot Noir and Chardonnay. The operation is based in Pommard but it makes a large range of wines from numerous appellations mostly located in the Côte de Beaune. Jean-Marc Boillot worked with his grandfather Henri Boillot between the late 60s and 1984 when he became winemaker for Olivier Leflaive. He created his own domaine in 1989 after inheriting vines from his grandfather, and later from his maternal grandmother, Etienne Sauzet's daughter. His brother Henri runs Domaine Henri Boillot in Volnay. Winemaking differs considerably between the red and white wines. The Pinot Noir fruit is destemmed and undergoes a cold maceration before fermentation. After basket pressing, it is aged in barrels (around 50 percent new oak) for around 16 months without racking. The Chardonnay grapes are pressed in pneumatic presses. The juice is racked off the heavy lees then fermented in oak barrels. The white wines are aged for around 11 months in oak, around 30 percent of which is new. The wines are not racked, although the lees are stirred weekly. Wines are sampled just before bottling to determine whether fining or filtration are required. In addition to its Burgundy wines, J.M. Boillot produces wines under two Languedoc-Roussillon labels: Vermentino and Syrah from Domaine de la Truffière; and a Roussanne and Syrah-Carignan blend from Domaine les Roques.
