        Producer Information

        The Donatsch winery and the associated “Ochsen” have been in the hands of the Donatsch family for more than 100 years - this is where the first Chardonnay grapes in the Graubünden rule were harvested and the first Pinot Blanc vines were grown. Today the Domaine Donatsch is under the management of the trained winemaker Martin Donatsch, who returned to his parents' winery from abroad in 2001. Since Martin had worked at wineries in Australia and South Africa as well as in Bordeaux , the wine world expected that the Donatsch wines would develop more towards fruit and body under his leadership. However, Martin Donatsch dispensed with the vineyard designations and introduced a three-tier quality pyramid for the Chardonnay and Pinot Noir grape varieties. This consists of the base wine Tradition (Village in Burgundy), the Auslese Passion (Premier Cru in Burgundy) and the top selection Unique (Grand Cru in Burgundy). Mainly the crus from the Passion and Unique lines appear more robust and cheeky compared to the earlier Donatsch wines. And with the Chardonnay Unique, it manages to bring out a touch more minerality through shortened wood aging in new barriques without batonnage. The son-father team Donatsch achieved one of the most remarkable innovations with their very own interpretation of the Graubünden original variety Completer. Today they vinify a fine, astonishingly structured and complex wine that, when drunk young, has a residual sweetness that disappears after a few years. Today the winery from Malans describes itself as follows: “We have been living for wine for five generations. Always one step ahead of trends, we have always remained true to culture and tradition. We don't want to keep producing more, we want to get better every year. Reduce to the max.”
