A Bimber single malt whisky bottled by La Maison du Whisky for the New Vibrations collection. The 2017 vintage English whisky was aged in a single cask (#196) and then bottled at 58.7% ABV.

Nose: Full, rich. On the first nose, notes of white mint, coconut milk, candied lemon and William’s pear rival each other in intensity. Allowed to breathe, delicate malty fragrances take over, while spices (ginger, cinnamon) gradually liven up the aroma palette.

Palate: Clean, lively. Just as milky and fruity as the nose, the attack develops into bright and herbal lands (green malt, cut hay). Flavours of grated ginger, vanilla and precious wood then softly envelop the taste buds.

Finish: Long, full. The rich attack offers up a pear and almond tart. Honeyed (acacia) and floral (broom, iris), the finish ends on a fresh note with aniseed, spices (cardamom) and infusions (green tea).

Distillery Information

Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today. The journey begins at our single farm, where 100% of our barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in our wooden washbacks that were hand-made at our own cooperage. We use direct fire to heat our small copper pot stills, and mature our spirit in hand-selected casks. Finally, our whisky is expertly blended and bottled onsite at our distillery.
