Choya Sake is a type of rice wine that is fermented using the process of sake brewing, then left to ferment for three days before being filtered through charcoal. It is then brewed using traditional brewing methods, with water, rice, yeast, and koji (a culture of mold spores used to ferment sake). This traditional brewing process produces a full-bodied sake with a light to medium body.
