Salcombe 'Daring' Gin

This gin, called Daring, has been developed to mimic the properties of the Cornish oyster, and features fennel, apple and lime to replicate the accompanying salad found in the dish. To create the new expression, Salcombe Distilling Co created a distillate using milk whey, which was then blended with English wheat grain spirit. The base spirit was then combined with 14 botanicals, including fresh fennel, Cornish apples, seaweed, blood orange and fresh lime. The gin then underwent a one-shot distillation process, after which the spirit was blended with oyster leaf and seaweed distillates. The name Daring also recalls a time when our quaint fishing village of Padstow was a thriving merchant port, whose ships transported spices all over the world. Daring was one of the ships, built for owners in Padstow; it is also the perfect word to describe the driving force and ethos of The Ainsworth Collection.

Nose: Fresh fennel, with trace citrus and apple aromas.

Palate: Buttery smooth, with soft citrus and warm spice notes.

Finish: Dry, with trace notes of apple and spices.

Distillery Information

Salcombe is a town in southwest England. While it's mostly known as a tourist spot today, it has a rich history that involves smugglers and fishermen. In the 19th century, it was a bustling port town that played a large role in fruit trade and was known for its "Salcombe Fruiters", small schooners that were built for speed ? a crucial factor in the transportation of fresh fruit. Steamships took over the fruit trade at the turn of the century and it wasn't until 1951 that sailboats came back in full force with the founding of the Island Cruising Club. It's there that Salcombe Gin co-founders first met in 1995. The pair would end each day of sailing with a gin & tonic at the Salcombe Yacht Club, eventually finding a common interest in the distilling industry. It was in 2014 that the idea took the form of the Salcombe Distilling Co.
