Produced in Pontarlier, France by Tempus Fugit Spirits, each batch of Tempus Vieux Pont Absinthe begins with a base spirit distilled from Chardonnay grapes in which a select blend of botanicals that includes a local variety of wormwood, anise, and fennel, are steeped. After this initial maceration, the blend is then re-distilled in a century-old alembic still, create a complex and textured spirit that is then macerated a second time with whole herbs in order to further enhance its flavor as well as give it its signature green hue before finally being proofed and bottled.
Tempus Vieux Pont Absinthe Tasting Notes
Nose: Pale peridot green in color, each sip of this absinthe greets you with a fresh and slightly briny aroma of fruity anise, cacao, spice, and minty wormwood.
Palate: This is then followed by a complex palate of white grapes, more wormwood and anise, fennel, and subtle herbal notes.
Finish: A sweet and well-balanced finish with a good alcohol burn.
