Alltech is the one of a handful of joint beer brewing and spirits distilling companies, or as they call it "brewstilleries," in the world. It was founded in 2000 by Irishman Dr. Pearse Lyons, formerly of Guinness brewing, in Lexington, Ky. The mashbill for this rye is 55% rye, 30% corn and 15% malted barley.

Nose: Spicy, floral aroma.
Palate: Notes of pepper, oak and vanilla on the palate.
Finish: Finish is long and complex, with an earthiness accented by notes of caramel and candy corn.

Lexington Brewing and Distilling Company is a brewery and distillery based in Lexington, Kentucky founded in 1999 by Pearse Lyons, the president and founder of animal nutrition company Alltech. Alltech entered the beverage industry with the introduction of their Kentucky Ale. In 2012 the company opened its distillery and developed a line of spirits including Pearse Lyons Reserve, a malt whiskey, Bluegrass Sundown, a bourbon-infused coffee drink, and Town Branch Bourbon
