      Notes of linden, mint and acacia are common, as are aromas of liquorice and cut hay. Age makes it a little golden and spicier. On the palate, the aromas of Chablis retain their freshness for a long time. From the amount of sap, a drumming attack.

          Producer Information

          The BERSAN family has been based in Saint-Bris-le-Vineux for many generations. It is thanks to this solid family tradition that the know-how has been transmitted and above all preserved within the Domaine Jean-Louis and Jean-Christophe BERSAN. Today father and son work together and maintain the heritage by cultivating old vines planted by Louis BERSAN, Jean-Christophe's grandfather, more than 75 years ago. And since 2009, Jean-Christophe has been renewing the vineyard. Regional archives revealed the presence of the Bersan family from the middle of the 15th century, in the Auxerre region, but the occupation of the current residence is more recent (end of the 19th century) In 2009, Jean-Christophe initiated the transition of 22 hectares of vines to conversion to organic viticulture. It was then in 2012 that the 22 hectares of vines were certified organic wines by the certification body ECOCERT. The village is located between Auxerre and Chablis, in northern Burgundy, the vineyard is planted on limestone, marly, even clayey soils which influences the freshness and brings very marked fruity aromas. The riprap in which the roots are embedded dates from the Jurassic period 150 million years ago (Portlandian, Kimmeridgian) and provides a very distinctive minerality.
